Lentil soup


the components

2 cups green or red lentils
4 cups of water
1 medium onion, chopped
2 cloves garlic, mashed
1 medium carrot, cut into cubes
1 medium tomato, cut into cubes
1/2 cup of celery, chopped
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cumin
1/4 cup of lemon juice
1/4 cup chopped fresh coriander

How to prepare

Wash the lentils well and soak them in water for 30 minutes.
Heat olive oil in a pot over medium heat.
Add onions and garlic and stir until golden.
Add carrots, tomatoes, and celery and stir for 5 minutes.
Add lentils, water, salt, black pepper and cumin.
Cover the pot and leave it on low heat for 30-45 minutes until the lentils are cooked.
Add lemon juice and coriander (optional) and simmer for another 5 minutes.
Serve lentil soup hot with bread

 Lentils with meat

the components

2 cups green or red lentils

1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cumin
1/4 cup of lemon juice
1/4 cup chopped fresh coriander

How to prepare

Wash the lentils well and soak them in water for 30 minutes.
Heat olive oil in a pot over medium heat.
Add onions and garlic and stir until golden.
Add the minced meat and stir until it changes color.
Add lentils, water, salt, black pepper and cumin.
Cover the pot and leave it on low heat for 45-60 minutes until the lentils and meat are cooked.
Add lemon juice and coriander (optional) and simmer for another 5 minutes.
Serve lentils with meat hot with rice or bread.
