Al-Arayesh is magic from Algeria
Algeria is a country rich in culture and traditions, and one of the most delightful aspects of its culture is its cuisine. Algerian cuisine is a fusion of various influences, including Berber, Arab, Turkish, and French. One of the most beloved and iconic Algerian sweets is Araish, also known as Arais or Arais El Warda. This delectable dessert is a must-try for anyone looking to experience the flavors of Algeria.
Araish is a traditional Algerian sweet that is typically served during special occasions such as weddings, Eid celebrations, and family gatherings. It is a pastry made of semolina, almonds, and honey, and is shaped into beautiful flower-like designs. The word "Araish" means "flowers" in Arabic, which perfectly describes the delicate and intricate designs of this sweet treat.
To make Araish, you will need the following ingredients:
- 500g of semolina
- 250g of ground almonds
- 250g of honey
- 1 tablespoon of orange blossom water
- 1 tablespoon of rose water
- 1 tablespoon of butter
- 1 teaspoon of cinnamon powder
- 1 teaspoon of ground anise
- 1 teaspoon of baking powder
- 1/4 cup of water
- A pinch of salt
- Sliced almonds and powdered sugar for decoration
To start, mix the semolina, ground almonds, cinnamon powder, anise, baking powder, and salt in a large bowl. In a separate pan, melt the butter and add it to the dry ingredients. Gradually add the orange blossom water, rose water, and water to form a dough. Knead the dough until it becomes smooth and pliable.
Next, take small portions of the dough and roll them into small balls. Using a flower-shaped cookie cutter, press the dough balls to create the desired shape. You can also use your hands to shape the dough into flower petals. Place the shaped dough on a baking sheet lined with parchment paper.
Bake the Araish in a preheated oven at 350°F for 20 minutes or until they turn golden brown. While the Araish is baking, heat the honey in a saucepan until it becomes thin and runny. Once the Araish is done, remove them from the oven and immediately dip them in the warm honey. Let them soak for a few minutes, then remove them and place them on a serving dish
